Another year, another spectacular dinner for the members of the prestigious WS Society. We were proud to be the partners for this annual gathering of Scotland’s finest lawyers, held, as always, at the WS Society’s hallowed home, the magnificent Signet Library in the heart of the Old Town.
Our event designers devised a wintry theme, more Georgian Edinburgh than Narnia, with a haze machine creating an atmospheric mist in the Upper Library. Tall flower arrangements in slender vases echoed the building’s iconic columns which were uplit in a welcoming glow. Chairs were draped in black and gold and all in all we defy anyone to imagine a more striking setting for this gathering of black tie and evening gown-clad guests.
Sipping on our house Pommery champagne, served by Heritage Portfolio staff dressed in bow ties and tails (not quite upstaging the lawyers, but almost), guests then sat down to a menu of earthy and spicy flavours – just the ticket for warming up on a cold, Edinburgh evening. The culinary indulgence commenced with a starter of kiln-roasted salmon accompanied by dainty garnishes of pickled romanescu cauliflower, quail eggs and tumeric-spiced tabbouleh. A refreshing Fino sherry sorbet followed, our twist on the WS Society’s traditional glass of sherry, which was such a hit the first time it appeared, it’s now a firm fixture at the event. The star of the show was roasted Scotch fillet of beef and the finale a cardamom-spiced white chocolate panacotta with home preserved autumn plums, complete with a delicate handcrafted caramelised almond brittle, a masterly flourish from our hugely accomplished chefs.
The WS Dinner is one of our most prestigious events and we are delighted that our association with the WS Society and the Signet Library looks set to continue for many years to come. All rise!
